Snow drifts in Paradise #Newfoundland

The snow is begining to pile up in Paradise. Some drifts are as high as a Mazda 3. This neighbour just got me a great deal on a snowblower so I guess I should give him a hand.

Getting hard to see the houses across the street

The wind is picking up and it's getting hard to see the houses across the street. My guess is we have 15 cm of new snow on the ground and another 45 cm on the way today / tonight. The forecast is calling for a second storm erly in the week that could bring another 60 cms. Thank goodness my snow blower just arrived. :-)

Snow Day in Paradise, Newfoundland!

Blizzard warning in effect

Today
Light snow becoming at times heavy this morning. Amount 20 cm. Blowing snow. Wind north 40 km/h gusting to 70 increasing to 60 gusting to 90 this morning. High minus 4.
Tonight
Snow at times heavy and blowing snow. Amount 20 cm. Wind north 60 km/h gusting to 90 becoming northwest 40 gusting to 60 overnight. Temperature rising to zero by morning.

Curried Chicken Lentil Soup Receipe

4 skinless chicken breasts
3/4 cup lentils
5 cups chicken stock
1 tsp olive oil
2 yellow onions diced
2 tsp curry powder
1/2 tsp ground ginger
4 gloes minced garlic
2 cups diced plum tomatoes
1 tsp lemon juice
salt and pepper to taste

Put lentils in a small saucepan and cover with cold water about 2 inches over the top. Bring to a boil. Reduce heat to a simmer and cook about 25 mins. Set aside. Bring the chicken stock to a boil in a sauce pan. Reduce the heat, add chicken, and cook about 6 to 8 mins. Remove chicken from stock and set aside. Reserve the stock for the soup. When the chicken is cool enough to handle, cut into bite sized pieces.

Heat oil over moderate heat. Cook the chopped onions for about 10 minutes, until tender and translucent. Add the curry, ginger, and garlic, and cook for 2-3 mins. Add the reserved stock to the onion mixture. Simmer about 10 mins. Add the diced tomatoes and lentils and bring to a boil. Add lemon juice and salt and papper to taste. Add the chicken and heat through and serve.
